Sausage Fried Rice

A dish made with chopped chicken sausages.
Preparation time: 20 minutes
Serves: 4

Ingedrients:
Rice - 2 cups
Oil - 3 tbsp
Onions (sliced) - 2
Chicken Sausage (chopped) - 6
Ginger paste - 1/2 tsp
Garlic past - 2 tsp
Corn - 1-1.5 cups
Soya sauce - 3 tbsp (add more for taste)
Green Chilly sauce - 2 tbsp
Salt - to taste
Black Pepper - to taste

Steps:
1. Cook about 2 cups of rice, and leave it to cool for about half an hour.
2. In a deep pan, heat the oil.
3. Add in the sliced onions and and the chopped chicken sausages and saute till the onions turn pink and the sausages look cooked.
4. Add in the ginger and the garlic paste and stir well to cook.
5. Once this masala mixture is cooked, add in the corn and mix well.
6. Cook till the corn is soft and then add the Soya sauce and the Green Chilly sauce (if available).
7. Add salt, black pepper as per taste and mix well.
7. Cook a little, till the sauces are absorbed and the mixture looks as one. Add the cooked rice and mix well.
8. Cook for 5 to 7 minutes, mixing the rice well with the mixture.

Cooking Tip: Soya sauce is very salty, so add the salt (as per taste) only after mixing in the Worcestershire sauce.

Paneer Bhurji


A very simple and quick recipe.
Preparation time: 20 minutes
Serves: 4

Ingredients:
Paneer (crumbled like bread crumbs) - 250 gms
Onions (chopped finely) - 2
Garlic Paste - 1/2 tsp
Ginger Paste - 1/2 tsp
Green Chillies - 2
Tomato (chopped finely) - 1
Cashews (slit into halves) - 7
Oil (for frying) - 1 tbsp
Milk - 3-4 tbsp

Masalas:
Garam Masala - 1/4 tsp
Black Pepper Powder - 1/2 tsp
Turmeric - 1/2 tsp
Red Chilli Powder - 1/2 tsp
Salt - to taste

Steps:
1. Heat oil in a tawa.
2. Fry the cashews to golden brown. Drain them and keep aside as garnish.
3. Cut the green chillies into 3 pieces and slit each piece. Fry them for a minute.
4. Now add the chopped onions and fry them till pink.
5. Add ginger paste and garlic paste to the oil and fry for 2-3 minutes.
6. Add the chopped tomatoes and fry further till mushy and the oil seperates.
7. Add all the masalas and mix well.
8. Add the milk and cook for 3-4 minutes.
9. Finally add the paneer and mix well. Do not cook the paneer for more than a minute, as it becomes hard.
10. Take in a serving dish and garnish with coriander leaves and the fried cashews (step 2)

Serving tip: Goes very well with paranthas.

Cooking tip: To prevent the ginger paste from spluttering in the oil, take the tawa off the gas, before adding the paste. Mix it well before placing the tawa back on the gas.
